MIKEY'S CHICKEN PASTA

4 servings

1 whole onion, medium
1 tablespoon garlic, crushed
4 tablespoons olive oil
3 to 2 chicken breasts, thinly sliced
1 teaspoon Italian seasoning
1/8 teaspoon crushed red hot pepper
1 cup cooking wine
1 6 ounce tomato sauce
1 package linguine, or favorite pasta

Boil pasta in salted water and drain. Saute onions and garlic in olive oil (add 1 teaspoon sofrito if desired). Add italian seasoning, crushed red pepper and chicken. Cook lightly (until chicken is white). Add salt and pepper to taste. Pour in tomato sauce and cooking wine (or sherry). If a thinner texture is desired, add more cooking wine. Add noodles and cook on medium until desired consistancy is achieved.
