ENCHILADA CASSEROLE

12 servings

1 pound ground Beef Top Round
1 16 oz. can refried beans
1 onion, Small to Medium
1 green pepper, Small
1 12 oz. can enchilada sauce
1 teaspoon Lawry's seasoned salt
1/2 teaspoon pepper
12 corn tortillas
1 8 oz. package cheddar cheese, Grated

Cut Tortillas into triangles or strips and deep fry until light brown. Place into bowl lined with paper towels to dry. Salt to taste.

Dice Onion and Green Pepper and place into frying pan with Ground Beef. Add Lawrey's and pepper and fry until cooked. Drain Ground Beef and add Refried Beans and half can of Enchilada Sauce. Stir over medium heat until Beans are hot and evenly mixed with beef.

Evenly layer the bottom of a 9"x13" pan with Tortilla Chips. Spread Ground Beef mixture over the top. Pour on remaining Enchilada Sauce and cover with cheese.

Bake at 350 degrees until cheese is melted
