RUM BUTTER BALLS

36 servings

1 cup butter, Softened
3/4 cup sugar
3 egg yolks
1/2 teaspoon vanilla
1/4 teaspoon almond extract
1 1/2 teaspoons rum extract
2 1/2 cups flour
1/4 cup sugar, Colored (decrative)

Cream together Butter and Sugar. Beat in Egg Yolks. Add Vanilla, Almond Extract and Rum Extract. Gradually add Flour kneading in last amount if necessary.

Roll into "snakes" about the diameter of a silver dollar. Wrap in waxed paper and refrigerate over night.

Cut in 1/4 inch slices and roll each slice between hands to form a ball. Roll balls in 1/4 cup Sugar or Colored Sugar and 1 1/2 powdered Dried Orange Peel (optional).

Place on cookie sheet and flatten using the bottom of a drinking glass. Bake at 350 degrees 10-12 minutes. Store in air tight container a couple of days to bring out flavor
